S’mores Hot Chocolate

Happy happy February 1st people! It feels like the winter just started so it’s hard to believe it’s already February, though I’m sure the winter haters don’t agree!  What’s the weather like where you are? It’s pretty darn cold over here. In fact, we had over two feet of snow on Tuesday during the blizzard and we have another foot predicted for tomorrow. Lucky for us, we’ve been getting light fluffy snow so it’s been perfect for snowshoeing adventures.  And don’t you know, this spiked s’mores hot chocolate  is kind of perfect for post-snowshoeing warm up time. I take that back, easy, rich, velvety smooth s’mores hot chocolate is totally perfect for any time.

But it’s especially spot on when there’s several feet of snow outside and you need to warm up. I mean, come on, chocolate + marshmallow = greatest combination evah, right? I mean, I love chocolate and peanut butter too, but I go crazy for a perfect melty s’mores. So you know this s’mores hot chocolate had my name all over it!  It’s pretty easy to make and you can add the splash of spiced rum for a little extra kick or you can leave it out and just add a bit of vanilla. Either way, this is delicious.

 I mean, just look at it. YUM.

Makes: 1 mug of delicious hot chocolate

Ingredients

  • 1 cup milk
  • 2 TBSP unsweetened cocoa powder
  • 2 TBSP honey
  • pinch of cinnamon
  • pinch of salt
  • marshmallows or fluff
  • 1 TBSP spiced rum (I use Old Monk)
or
  • ½ tsp vanilla extract

Directions

Heat the milk, cocoa powder, honey, cinnamon, and salt in a small saucepan over medium heat. Whisk well and heat until it simmers. Pour into a mug, add rum or vanilla, and stir well. Top with spoonfuls of fluff or several marshmallows and give it a good stir. Try not to get marshmallow lips as you enjoy!
