Full disclosure, this is not a recipe post. This is just an amazing dessert you can create with your leftover pie.
It’s the Wednesday before Thanksgiving and I’m sure you have your Thanksgiving menu and your eating pants all ready to go. Truthfully I already have more winter holiday spirit than Thanksgiving spirit today, but I am so looking forward to the leftovers! I’m not actually a huge fan of carved turkey, but man do I love a good turkey, cranberry, and stuffing sandwich the day after Thanksgiving. You know what else I love? Pie! Pie for breakfast, pie with afternoon tea, and pie for dessert. But if you’re a little bored of eating plain pumpkin pie this week, try making this pumpkin pie ice cream blend. It’s really kind of amazing. It’s smooth, it’s creamy, and it just might be the easiest and best thing I’ve made in months. No joke.
Start with a slice of pie. I used pumpkin, but this is delicious with any type of pie.
Add some ice cream.
And blend with an immersion blender. Or just soften the ice cream and blend with a fork. Be sure to leave chunks.
And then dig in!
