I have been having a super low-key weekend and I’m loving it. In the pre-holiday rush, it’s nice to be able to just relax and not worry about running around trying to finish my shopping. Am I right? Although, full disclosure, I did end up at the mall yesterday. But strangely it was totally empty. Does everyone just shop online now? Whatever the reason, it worked out really well for me, I got a few things and came home still feeling relaxed.

Are you ready for today’s Sunday Cocktail? Want to try something super winter-y and also super delicious?  Something that will work for the holidays but is also easy? Look no further than this pomegranate rosemary cocktail.  You will love how easy it is to make and to drink. Perfect for having at a party, drinking in front of the fire, or drinking while watching holiday movies.  The ginger hits you first but then it mellows out and you get just a hint of rosemary and pomegranate bourbon-y goodness. You’ll note that there isn’t a ton of bourbon in this one. That’s the way I prefer it, but feel free to add more if you’d like something a little stronger.  Meanwhile, it’s just started to lightly snow and I’m ready to sit back with a pomegranate rosemary cocktail, enjoy the holiday lights, and watch a holiday movie. Enjoy!

Pomegranate Rosemary Cocktail

Makes: 2 cocktailsPomegranate-Rosemary-Cocktail-Treats-and-Eats1

Ingredients

  • 4 ounces pomegranate juice
  • 1½ ounces bourbon
  • 1½ ounce simple syrup
  • ½ inch fresh ginger
  • one sprig of fresh rosemary
  • ice

Directions

To make the simple syrup

Add ¾ of a tablespoon of hot water to ¾ tablespoon sugar and stir until sugar is dissolved.

To make the pomegranate rosemary cocktail

Peel a ½ inch piece of fresh ginger and cut it into small pieces. Add the cut ginger, rosemary, and simple syrup to a cocktail shaker. Muddle the ingredients together using a muddler or a pestle. Add the pomegranate juice and bourbon to the shaker and fill halfway with ice. Shake well and then strain into a cocktail glass. Garnish with a sprig of rosemary or pomegranate seeds if desired.
