Sometimes all I really want to say is ‘this is amazing, make this now’. So that’s what I’m going to say today. Grilled Banana Bread Ice Cream Sandwiches are a revelation and you need to make it. Just whip up your favorite banana bread recipe, slice it, grill it on the stovetop or real grill, and then top with ice cream.
It’ll be messy, but trust me, you’ll love it.

Grilled banana bread ice cream sandwiches
Makes: 8 sandwiches
- one loaf of your favorite banana bread
- 1.5 quarts vanilla ice cream
Bake and cool your chosen banana bread recipe as directed. Once fully cooled, slice off the ends and slice into 16 pieces.
Heat a stovetop grill pan (or actual gril) on medium high heat. If using a stovetop pan, spray with cooking spray and cook for 2-3 minutes on each side, or until grill marks appear. Remove from heat and let cool.
Meanwhile, remove ice cream from freezer and let soften for a few minutes. Place two scoops of ice cream on 8 slices of the grilled banana bread. Top with remaining 8 slices of bread. Eat right away and wrap remaining sandwiches in plastic wrap.
