Sorry for the unexpected delay in posting! We’ve been away for a few weekends and I haven’t been able to take pictures of the food I’ve been making. But I did manage to take some pictures of this lovely blackberry gin fizz cocktail. It’s a little more involved than a typical cocktail, but it’s really worth the effort. The combination of freshly pureed blackberries, sparkling lemon, and mint make this taste like late spring in a glass. As with all drinks, the proportions are fully adjustable, as is the type of berry you use. It’s a perfect cocktail to take out into the backyard and sip while lazing around in an Adirondack chair. Just try it, you’ll see.
BLACKBERRY GIN FIZZ COCKTAIL
Makes: 6 cocktails
INGREDIENTS
- 6 oz blackberries
- ½ cup sugar
- 2 cups gin (less if you wish)
- sparkling lemonade or lemon beverage (such as san pelligrino limonata)
- mint
DIRECTIONS
Puree the blackberries and sugar together in a blender or food processor. Let sit for 10 minutes. Mix well and then strain the blackberry mixture through a fine sieve and discard the seeds. Stir in the gin.
Fill 6 glasses with ice and distribute the blackberry /gin mixture between them. Top off with the sparkling lemon beverage and stir well. Top with mint and enjoy!
