I have never been a fan of the garden salad. I will happily eat cucumbers, lettuce, and peppers on their own, but put it all together and I’ll definitely stay away. But throw some pomegranate, fennel, and sliced oranges on some greens and I’m all over it. And sometimes, you just really need a salad- especially if you have just eaten a ton of s’mores. Not that I would ever do that. Or maybe I wouldn’t if I always had pomegranate seeds lying around.
There’s barely a recipe here. Pick your favorite greens, add some sliced oranges, fennel, and pomegranate, and then top with a mustard vinaigrette. It’s easy peasy and so much better than a boring garden salad
Makes four servings
- Spinach or arugula
- 2 oranges
- 1 pomegranate
- 1 bulb of fennel
For the Mustard Vinaigrette
- 1 tsp Dijon mustard
- 2 ½ tsp lemon juice
- 1/3 cup olive oil- add more to taste
- Salt and pepper
- Small dab of honey
Use a paring knife to cut off the peel and pith of the oranges. Slice into thin pieces. Confused? Here’s a good tutorial. Cut the fennel into very thin slices. Cut open the pomegranate to release the seeds. Place desired amount of greens into bowls and top with orange slices, fennel, and pomegranate seeds.
To make the vinaigrette: Whisk all ingredients together and add more of anything to taste. Drizzle over salad and enjoy!
