You will love how delicious and easy this pina colada is. Using just fresh pineapple, rum, coconut ice cream, and ice, each sip of this frozen concoction is like a vacation in a coconut shell.
For me, the pina colada is the ultimate indulgent hot weather and vacation cocktail, though truthfully I’m not exactly a beach vacation kind of gal. As someone who doesn’t love (aka hates) the heat, laying out on the beach in the sun is not something I ever want to do. So it’s pretty surprising that four and half years ago Stephen and I went on a once in a lifetime trip to the South Pacific. We spent a few days in Tahiti and the neighboring island of Moorea (which fyi is much prettier than Tahiti) and I LOVED it. This is partly due to the gorgeous scenery, but is more likely due to the numerous pina coladas made with coconut ice cream that I drank and the fact that I didn’t spend any time on the beach because we had our own staircase into the South Pacific to swim and snorkel to our hearts content. I’ve now amended my ‘no beach vacations’ rule and will happily take a vacation that involves my own private overwater bungalow any day. The best pina colada
Makes: 2 cocktails
Ingredients
- 1¼ cup fresh pineapple, chopped
- 2½ oz rum
- 1 cup coconut ice cream
- 1 cup ice
Directions
Add all ingredients to a blender and blend on high speed until well mixed. Taste and adjust proportions as desired. Pour into two glasses and enjoy!
