This gin and aperol based spring cocktail is a light and delicious way to ring at the start of the season!
Did you enjoy the first weekend of Spring? Here in Boston, it snowed on Friday and Saturday, but it’s bright and sunny and looking very Spring-like today. Of course, it’s still 31 degrees (feels like 17), but a bright and sunny day is a win in my book.
We had a good friend visiting us this weekend and we had a great time catching up, going out for a great dinner with tasty cocktails that I need to try to recreate at home, and a delicious dim sum brunch this morning. Now I’m ready to sit back and relax with a light and fizzy Spring Thyme Spritzer. This cocktail is light on the liquor but it’s a lovely refreshing drink that feels just right to usher in the new season. There are a few ingredients but these could easily be switched up if you like. Just muddle a few thyme leaves with some honey, add a bit of gin, a bit of Aperol, and some freshly squeezed grapefruit juice. Shake it up in a cocktail shaker with ice and then strain it into a glass with ice. Top off with some seltzer, a sprig of thyme and you’re good to go with a perfectly light spring cocktail.
Spring Thyme Spritzer
Makes: 1 cocktail
Ingredients
- 1 tsp honey
- 3 sprigs of thyme
- 1 oz grapefruit juice
- ½ oz gin
- ½ oz Aperol
- 1 – 1½ oz seltzer
- ice
Directions
Add the leaves from two sprigs of thyme and the teaspoon of honey to a cocktail shaker and muddle well.
Add the grapefruit juice, gin, Aperol, and some ice to the shaker and shake well. Strain into a rocks glass filled with ice and top off with seltzer to taste. Garnish with remaining thyme and slice of grapefruit if desired.
Notes
Feel free to use Campari instead of Aperol, or just double up on the gin.
