Sometimes (often), I just want a piece of cake. And sometimes (often), I just want something easy. Don’t get me wrong, layered cakes are amazing. I love love love to eat them and I love to make them. But layered cakes are not everyday cakes. And everybody needs a good everyday cake. This spiced applesauce cake is a perfect fall/winter everyday cake. It’s perfect for breakfast, perfect for tea time, perfect for dessert, perfect for pretty much any time.
This cake is not really apple flavored, it’s definitely more of a spice cake. The applesauce provides some nice moisture and a light apple flavor. And the cinnamon cream cheese frosting works really well with the other spices in the cake. This is really a nice simple and delicious cake, give it a try!
Spiced Applesauce Cake with Cinnamon Cream Cheese Frosting
Adapted from Gourmet
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ teaspoon cinnamon
- ½ teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 8 tablespoons unsalted butter, softened
- 1 cup packed light brown sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs
- 1 ½ cups unsweetened applesauce
- 5 oz cream cheese, softened
- 3 tablespoons unsalted butter, softened
- 1/4 teaspoon pure vanilla extract
- 1 cup confectioners sugar
- 1/2 teaspoon cinnamon
Preheat the oven to 350 F.
Butter the bottom and sides of an 8 or 9 inch square cake pan and line with parchment paper.
In a medium bowl, whisk together the flour, baking soda, baking powder, salt and spices. In a large bowl, beat the butter, brown sugar, and vanilla at high speed with an electric mixer. Mix until light and fluffy, about 3 minutes. Add the eggs one at a time, be sure to beat well after each addition. On low speed, slowly add the flour mixture until just combined.
Pour the batter into the pan and spread evenly. Bake until golden-brown and a cake tester comes out clean, about 40-45 minutes. Let the cake cool for 10 minutes and then remove from pan. Let cool completely on a cooling rack before frosting.
To make the frosting: Whip the cream cheese, butter, and vanilla extract with an electric mixer until light and fluffy, about 3 minutes. Add the cinnamon and confectioners sugar and beat on medium low speed until well combined.
Spread the frosting over the cooled cake and enjoy!
