Let me introduce you to my new favorite snack. Or more accurately, let me introduce you to my new favorite healthy snack. Because let’s be real, I’d still rather eat chips and dip. But these spice roasted chickpeas are up there! This is actually really shocking to me because chickpeas have never been high on my list of favorite foods. I always think they look good when I see other people eating them, and I’ve tried adding them to salads and other dishes, but I always end up eating around them. But roasting them? These are a revelation. Seriously. Somehow coating the chickpeas with a spice mixture and roasting them turns the chickpeas into a crunchy delicious nut like snack. And it’s actually hard to stop eating them. But you may not want to eat too many at once since these are beans. I’m just sayin’….
Spice roasted chickpeas
Ingredients
- 1 15 oz can of chickpeas
- 2 tsp olive oil
- ¼ tsp salt
- ¼ – ½ teaspoon cumin powder
- ½ teaspoon garlic powder
- ¼ teaspoon cayenne*
Directions
Preheat oven to 400 F.
Drain and rinse the chickpeas under cold water. Dump the chickpeas out onto some paper towels and dry thoroughly. This will cause some of the skins to come off the chickpeas- this is a good thing! Personally I enjoy taking the skins off, but if this isn’t your thing, just remove the shells that come off naturally and leave the rest on.
Place the dried chickpeas in a bowl and add the olive oil, salt, cumin, garlic powder, and cayenne. Toss carefully and pour chickpeas onto a baking sheet (make sure they are in a single layer). Bake for 30-35 minutes, flipping the chickpeas halfway through. The chickpeas are done when they are crunchy. Enjoy!
