Ready for another Sunday night cocktail? I must be on a ginger kick, because this week we’re trying a variation of the Dark and Stormy cocktail. This is an easy cocktail that combine dark rum with ginger beer (that’s the stormy). You must use ginger beer and not ginger ale. Use any brand of ginger beer you’d like (or make your own), but we’re partial to Gosling’s. The spiciness of the ginger makes this drink a perfect fit for late winter for me, but it’s so refreshing that it also works really well as a summer drink. This makes sense since it was invented in Bermuda. Either way, there’s a lot to love about this easy to drink cocktail.
- 2 ounces dark rum
- 4-6 ounces ginger beer
- Squeeze of lime
- Fill a highball glass with ice. Squeeze a lime wedge over the ice and drop into the glass. Add the rum and then top with ginger beer. Stir lightly and then garnish with a lime wedge. Enjoy!
