I’ve spent the last several years trying to avoid rum-based cocktails. All I could think of was the syrupy sweetness of rum and cokes or sweet fruity rum drinks. But well-balanced rum cocktails are growing in popularity these days and with good reason. When paired correctly, rum cocktails do not have to taste syrupy sweet, they can actually be quite delicious. For me, sometimes a good daiquiri is all I need. And I don’t mean a frozen bright pink concoction. I mean a real daiquiri. Just a basic rum + lime + simple syrup = deliciousness type of cocktail. Daiquiris are generally made with white rum, but I like to mix it up by using dark spiced rum. If you can find Old Monk rum I’d highly recommend trying it. It adds a complexity that’s lacking in white rum and gives the daiquiri an added spiced flavor that’s really quite delicious. But really, any rum will do as long as you’re using fresh lime juice.
