No matter the season, I love me a good gin and cucumber cocktail. I am definitely not someone who prefers to eat or drink items that are seasonally appropriate. I am perfectly happy to drink mojitos in the winter and eat cider donuts all year round. Having said that, this cocktail is perfect for a rainy early spring night. It’s light and refreshing with just a little bite at the end. Much like spring in New England.
- 1 oz gin
- 1 oz st germain or other elderflower liqueur
- 3 cucumber slices
- Simple syrup
- Seltzer or sparkling water
- Muddle two slices of cucumber with the gin and st germain in a glass. Add a few drops of sriracha and stir. Add ice and stir again. Add simple syrup to taste and top with a bit of seltzer. Garnish with the remaining cucumber slice. Enjoy!
